How do i even know if this server has progression for armor and weapons/ items . because is diamond just the highest or are there some more ways to make custom armor via crafting ????

No, Diamond isn't the limit. OP SkyBlock has custom enchants and special sets and weapons too. The tutorial at spawn shows you how to get started with the custom enchants and you can check the crate previews to see some of the special gear available. Not too sure about crafting custom sets though.
